the technical sheet
An intense, refined, emotional wine that expresses the soul of Valpolicella.
Description
From the Late Middle Ages, the lands on which Corteforte now stands were entrusted, as a benefice, to the Abbey of San Zeno, which saw to the cultivation and harvesting of the fruits.
It is therefore only right to pay tribute with this name to the firstborn of the Corteforte Amarones.
“Terre di San Zeno” is vinified exclusively from the traditional grapes of Valpolicella, selecting the best bunches at the right point of ripeness and setting them aside for drying.
Crushing takes place only in December or at the beginning of the following year, with a very long fermentation because of the low temperature of the period and the high natural sugar content of the must. After a long rest in steel, maturation in oak barrels and a long ageing in bottle, “Terre di San Zeno” is ready and perfect to drink, and will remain so for over 10-15 years from the vintage.
